This simple couscous side is dressed in orange juice and infused with toasted pecans, dried cranberries and fresh parsley.
|.75 cup||(175 mL) Orange juice|
|2 tsp||(10 mL) Butter|
|.75 cup||(175 mL) Couscous|
|.35 cup||(50 mL) Dried cranberries|
|.35 cup||(50 mL) Chopped pecans|
|1 tbsp||(15 mL) Chopped parsley|
BOIL juice and butter in a small saucepan. Stir in couscous, cover and remove from heat.
LET stand for 5 minutes.
ADD cranberries, pecans, and parsley before serving.
