Easy ingredients make this simple skillet frittata a must-have in your recipe file. Perfect for busy weeknights.
|1 tbsp||(15 mL) Olive oil|
|.25 cup||(60 mL) Diced onion|
|1||Small potato, peeled and chopped into small pieces|
|1||Clove garlic, minced|
|.5 cup||(125 mL) Diced Schneiders® Country Naturals™ Uncured Baked Ham|
|2 tsp||(10 mL) Chopped fresh parsley|
|1 tbsp||(15 mL) Butter|
|2 tbsp||(30 mL) Milk|
|3||Fresh eggs, beaten|
|Salt and pepper|
HEAT oil in a small skillet over medium. Add onion and potato and sauté until almost fork tender. Add garlic and continue cooking until potatoes are tender. Add ham and parsley. Stir until heated through.
MELT butter in a small non-stick pan. Beat milk and eggs together in a small bowl, season with salt and pepper and pour into pan. Cook over medium heat until eggs are set. Sprinkle with potato and ham mixture and serve immediately. Garnish with parsley.
Add your favourite grated cheese to the top of your frittata and broil for 2 minutes before serving.
