2 cup (500 mL) Buttermilk
2 tbsp (30 mL) Worcestershire sauce
2 tbsp (30 mL) Hot sauce
1/4 tsp (1 mL) Salt
1/4 tbsp (1 mL) Pepper
1 - 2 lbs (450-900 g) Maple Leaf Prime Naturally® Chicken Wings
1/2 cup (125 mL) Flour
3 tbsp (45 mL) Cornmeal
1 tbsp (15 mL) Cajun spice
1/4 cup (60 mL) Buttermilk
1/3 cup (80 mL) Mayonnaise
1 Clove garlic, minced
3 tbsp (45 mL) Pickled jalapeno peppers
1/2 Lime, zested and juiced
Dash of Hot sauce
1 tbsp (15 mL) Cilantro (optional)


WHISK together the buttermilk, Worcestershire, hot sauce, salt and pepper in a large shallow bowl. Add the wings and toss to coat. Cover and refrigerate for at least one hour or up to overnight.

PREHEAT oil in a deep fryer to 350°F (180°C). Drain the buttermilk mixture from the wings and pat dry. Mix together flour, cornmeal and Cajun spice in a large bowl. Toss the wings in the flour mixture and working in batches fry the wings for 8-10 minutes or until golden brown and crispy and the internal temperature reaches 185°F (85°C). Be careful not to over-crowd while frying the wings.

PULSE all of the ingredients for the dip in a food processor until smooth. Serve the dip alongside the hot crispy wings.
