A French inspired dish with awesome seasonal flavors and perfect to make for that special someone on date night.


4 Slices Maple Leaf® Natural Selections® Bacon, chopped
1 Pkg Maple Leaf Prime Naturally® Boneless Skinless Chicken Thighs
1/4 cup (60 mL) Flour
Salt and pepper
20 Pearl onions, peeled
1 Pkg (8 oz/ 227 g) Cremini mushrooms, quartered
2 Cloves garlic, thinly sliced
1 cup (250 mL) Dry white wine
2 cups (500 mL) Chicken broth
1 lb (500 g) Mini new potatoes, cut in half
1 (14 oz/398 mL) Can artichokes, drained
1 cup (250 mL) Fresh or frozen peas
Chopped fresh parsley


COOK bacon in a large ovenproof skillet or Dutch oven over medium-high heat until crisp, about 5-6 minutes. Remove from pan, using a slotted spoon, place on paper towel and set aside.

TOSS chicken in flour, seasoned with salt and pepper. Brown in pan with bacon drippings over medium-high heat. Remove from pan and set aside.

ADD onions to same pan and cook 2-3 minutes. Add mushrooms and garlic, cook 2-3 minutes more or until tender and fragrant. Deglaze the pan with white wine. Bring to a boil and reduce heat. Simmer until liquid is reduced by half. Add chicken broth and potatoes. Return chicken and bacon to the pan, cover and simmer 15-20 minutes.

STIR in artichokes and peas and cook for 3-4 minutes or until warmed through. Season with salt and pepper and garnish with parsley before serving.


Serve with fresh crusty bread and a side salad.
