A French inspired dish with awesome seasonal flavors and perfect to make for that special someone on date night.
|4||Slices Maple Leaf® Natural Selections® Bacon, chopped|
|1 Pkg||Maple Leaf Prime Naturally® Boneless Skinless Chicken Thighs|
|1/4 cup||(60 mL) Flour|
|Salt and pepper|
|20||Pearl onions, peeled|
|1 Pkg||(8 oz/ 227 g) Cremini mushrooms, quartered|
|2||Cloves garlic, thinly sliced|
|1 cup||(250 mL) Dry white wine|
|2 cups||(500 mL) Chicken broth|
|1 lb||(500 g) Mini new potatoes, cut in half|
|1||(14 oz/398 mL) Can artichokes, drained|
|1 cup||(250 mL) Fresh or frozen peas|
|Chopped fresh parsley|
COOK bacon in a large ovenproof skillet or Dutch oven over medium-high heat until crisp, about 5-6 minutes. Remove from pan, using a slotted spoon, place on paper towel and set aside.
TOSS chicken in flour, seasoned with salt and pepper. Brown in pan with bacon drippings over medium-high heat. Remove from pan and set aside.
ADD onions to same pan and cook 2-3 minutes. Add mushrooms and garlic, cook 2-3 minutes more or until tender and fragrant. Deglaze the pan with white wine. Bring to a boil and reduce heat. Simmer until liquid is reduced by half. Add chicken broth and potatoes. Return chicken and bacon to the pan, cover and simmer 15-20 minutes.
STIR in artichokes and peas and cook for 3-4 minutes or until warmed through. Season with salt and pepper and garnish with parsley before serving.
Serve with fresh crusty bread and a side salad.
