This colourful Confetti Pasta, made with Olivieri® Three Cheese Rainbow Tortellini, is perfect for a family picnic!


1 (700 g) Package OLIVIERI® Three Cheese with Rainbow Tortellini
1 (160 g) Tub OLIVIERI Olive Oil and Garlic Pesto
.5 cup (125 mL) Mayonnaise
2 tbsp (30 mL) Red wine vinegar
.5 cup (125 mL) Chopped basil leaves
2 cups (500 g) Cherry tomatoes, sliced in half
1 cup (250 mL) Chopped yellow peppers
1 cup (250 mL) Sliced black olives
.5 cup (125 mL) Finely diced sun-dried tomatoes


COOK tortellini for 6-8 minutes in a large pot of boiling salted water. Drain and rinse with cold water.

TOSS pasta with Olive Oil & Garlic Pesto. Set aside.

COMBINE remaining ingredients in a large bowl. Add pasta, cover and chill.

TOSS gently before serving.
