This colourful Confetti Pasta, made with Olivieri® Three Cheese Rainbow Tortellini, is perfect for a family picnic!
|1||(700 g) Package OLIVIERI® Three Cheese with Rainbow Tortellini|
|1||(160 g) Tub OLIVIERI Olive Oil and Garlic Pesto|
|.5 cup||(125 mL) Mayonnaise|
|2 tbsp||(30 mL) Red wine vinegar|
|.5 cup||(125 mL) Chopped basil leaves|
|2 cups||(500 g) Cherry tomatoes, sliced in half|
|1 cup||(250 mL) Chopped yellow peppers|
|1 cup||(250 mL) Sliced black olives|
|.5 cup||(125 mL) Finely diced sun-dried tomatoes|
COOK tortellini for 6-8 minutes in a large pot of boiling salted water. Drain and rinse with cold water.
TOSS pasta with Olive Oil & Garlic Pesto. Set aside.
COMBINE remaining ingredients in a large bowl. Add pasta, cover and chill.
TOSS gently before serving.
