This soup is soothing and always cures what ails you. :-D It is definitely a comfort food.


3 cups potatoes, diced with peels on
1/3 cup celery
1 cup chopped carrot
1/3 cup chopped onion
2 cup Ham
1 Pkg chicken bouillon cube
1 tbsp salt
1 tsp pepper
5 tbsp butter
2 cups milk
2 cups shredded cheddar cheese
3 cups water


Combine potatoes, celery, onion, ham, water and bouillon cube in a pot
Bring to boil.
Cook over medium heat until potatoes are tender
Add salt and pepper
In separate pan melt butter over medium heat and stir in flour.
Cook and stir constantly until thick
Add milk slowly as not to form lumps
Continue to stir until thick
Add in 1 and 1/2 cups of cheese and stir until melted.
Add cheese mixture to the pot with ham and vegetables and cook until heated
Pour into serving bowls and sprinkle remaining cheese on top.
*gets thicker as cools
