Healthy and delicious- the perfect side for almost any dish. I would pair it with sweet and sour pork. It is a little sweet, tangy, and pretty too- one of my favourite salads.


2 cups cooked quinoa (cooled)
1 carrot diced
2 cups loosely packed kale roughly chopped
1/2 yellow bell pepper diced
1/2 red bell pepper diced
1/4 cup red onion diced
1/4 cup dried cranberries or raisins
1/4 cup lemon juice
1/4 cup honey
1/4 cup olive oil
1 tsp salt


In a large bowl, mix together the lemon juice, honey, olive oil and salt.
Add all other ingredients to the dressing and coat everything completely.
It can be served immediately, or let it sit in the fridge for at least two hours so the flavours combine. It will taste even better. Enjoy!
