Bittersweet coffee rub on juicy, succulent ribs, slathered with sweet, sticky BBQ sauce.


2 Racks Maple Leaf Prime® Pork Side Ribs
2 tbsp Kosher salt
1 tbsp Pepper
1 tbsp Garlic powder
4 tsp Smoked paprika
2 tbsp Chili powder
1 tbsp Instant espresso coffee
2 tbsp Brown sugar
3/4 cup Ketchup
3 tbsp Brown sugar
1 tbsp Yellow mustard
2 tbsp Worchestershire sauce
2 tbsp Lemon juice
2 tsp Coffee rub
2 tbsp Molasses
Dash of hot sauce


REMOVE membrane from the back of each rack of ribs.

COMBINE all of the ingredients for the coffee rub in a small bowl. Generously coat the ribs with the rub, reserving 2 tsp (10 mL) for the BBQ Sauce. Arrange the ribs in a shallow baking dish and refrigerate for at least two hours or up to overnight.

MEANWHILE, whisk together all of the ingredients for the BBQ sauce. Refrigerate until ready to use.

PREHEAT BBQ to high for 10 minutes then turn one side of the BBQ off. Wrap each rack of ribs in aluminum foil, add ¼ cup (60 mL) of water to each packet so the ribs will steam while cooking. Place the packets on the side of the BBQ that has been turned off. Adjust heat to medium-high and close the lid. Cook for 1 ½- 2 hours or until the ribs are very tender but not falling off the bone.

REMOVE the ribs from the foil and place on the heated side of the grill. Slather with BBQ sauce and continue to cook for 6-8 minutes, turning and basting with sauce frequently.
