Easy and exotic! Creamy and nutty coconut rice.
|1 tbsp||(15 mL) Butter|
|1 Pkg||(250 g) Ready Prepared Express Basmati Rice|
|2 tbsp||(30 mL) Cilantro|
|1/2 cup||(125 mL) Coconut milk|
|1/3 cup||(80 mL) Toasted coconut|
|Juice of one lime|
MELT butter in a large skillet over medium. Add rice and toss to coat with butter. Stir in cilantro and coconut milk. Add toasted coconut and fresh lime juice. Salt to taste and serve.
Toast coconut on a baking sheet in a preheated 350°F (180°C) oven for 3-5 minutes.
Serve with Maple Leaf® Prime Naturally Thai Green Curry Chicken.
