This roast chicken is a perfect recipe for an intimate Thanksgiving. A great replacement for a large turkey.


1 Maple Leaf Prime Whole Chicken
2 cups stuffing, prepared
1 sprig rosemary
2 sprigs thyme
2 sage leaves
2 tbsp olive oil
1/2 cup butter, melted


Preheat oven to 375 degrees.

Stuff the cavity of the chicken with prepared stuffing and secure legs with butchers twine. Place chicken into a roasting pan. Carefully loosen the skin over the breast and insert the herbs underneath the skin. Rub olive oil over chicken and then pour melted butter over top.

Roast in oven for 45 - 65 minutes or until internal temperature reaches 165 degrees. If chicken is browning to quickly, tent with tin foil.


Serve with mashed potatoes and sautéed kale.
