This is a simple solution for picky eaters, as every person compiles their own fajita
|1.5 tsp||mexican chili powder|
|1 tsp||olive oil|
|1/2 cup||grated cheddar cheese|
mix the cumin and chili powder. drizzle oil, then squeeze the juice of 1/2 lime on the chicken breasts, then pat on 2/3 of the spice mixture. Put on a Barbeque grill to cook.
Slice the onion, reserving about 2 Tbsp, chopped for the guacamole, Fry in olive oil
Meantime, the remaining lime juice, remaining spices, and 2 Tbsp chopped onion in a food processor and process until smooth. Add the avocado, and process until it combines.
When the chicken is cooked, set aside to rest and heat the tortillas.
Serve the cheese, onions, guacamole and tortillas separately for each person to comile their own meal.
