Quick & easy to prepare & OH so good!


1 Dempsters English Muffin
1 egg
1 tsp butter
1 can tuna 170 gr. drained
1/4 cup diced red pepper
1/4 cup thinly sliced celery
1 tsp green onion chopped
2 tbsp mayo
1 tomato slice
1 1/2 cheese slices
salt, pepper to taste


Spray pan with non-stick cooking spray & cook egg till done. Set aside. Prepare tuna salad by mixing tuna, red pepper, celery, green onion, mayo & salt & pepper. Split english muffin in half, toast & butter both sides.

Place 1 cheese slice on bottom half of english muffin, add cooked egg & top with tomoto slice. Next place 1/4 of the tuna salad on top of tomato & add 1/2 cheese slice on top. Microwave for 20 seconds till cheese melts. Top with chives or cilantro (optional).
