Citrus Steak and Corn Salsa Wraps

About this Recipe

A classic Mexican traditional soft taco recipe featuring succulent steak and fresh seasonal corn!

Ingredients

STEAK MARINADE:
2 Striploin steaks
2/3 cup (160 mL) Orange juice
2 Pieces chipotle peppers in adobo sauce, chopped
3 Cloves garlic, minced
2 tbsp (30 mL) Lime juice
4 tsp (20 mL) Sugar
2 tsp (10 mL) Orange zest
2 tsp (10 mL) Lime zest
2 tsp (10 mL) Ground cumin
2 tsp (10 mL) Dried oregano
1/2 tsp (2 mL) Salt
1/2 tsp (2 mL) Ground pepper
SALSA:
2 tbsp (30 mL) Vegetable oil
2 tbsp (30 mL) Lime juice
1 1/2 cups (375 mL) Frozen corn, thawed
1 Small red onion, chopped
1/4 cup (60 mL) Chopped cilantro
8 Dempster’s® Original Small Tortillas
Warmed sour cream

Directions

PLACE steak in a large resealable bag. Whisk together remaining marinade ingredients, pour over steak. Seal bag and marinate in refrigerator for at least 1 hour.

HEAT a fry pan over medium-high heat, add marinated steak and cook for 3 minutes per side for medium rare. Remove from pan and let stand for 10 minutes then slice into 1/4 inch (5 mm) slices.

ADD lime juice to same pan and with a wooden spoon scrape up any bits from bottom. Add corn, onions, and cilantro, cook for 2-3 minutes.

DIVIDE corn salsa between tortillas, top with an even amount of sliced steak. Serve with sour cream.
