About this Recipe

Citrus fruit adds bright flavour to this simple chicken dish. Served with sautéed vegetables, it’s the perfect weeknight meal.

Ingredients

CHICKEN:
2 Maple Leaf Prime Naturally® Boneless Skinless Chicken Breasts
2 tbsp (30 mL) Olive oil
Juice of 1 orange
Juice of 1 lime
4 tsp (20 mL) Lemon pepper
Salt
VEGETABLES:
1 tbsp to 2 (15-30 mL) Olive oil
2 Cloves garlic, minced
3 Small zucchini, sliced in half lengthwise
1 Small yellow summer squash, sliced into rounds
6 Shallots, peeled and cut in half lengthwise
.5 Red pepper, sliced
.5 Yellow pepper, sliced
1 tbsp (15 mL) Chopped fresh thyme
Salt and pepper

Directions

CHICKEN:
PLACE chicken in a shallow dish. Combine oil, orange and lime juice, lemon pepper and salt in a small bowl. Pour over chicken and massage into meat. Set aside while you prepare vegetables.

HEAT a large skillet over medium-high heat. Add chicken and cook 5-7 minutes on each side or until golden and the internal temperature reaches 165°F (74°C).

VEGETABLES:
HEAT olive oil in a large pan over medium-high heat. Add all ingredients and toss to coat. Cook until vegetables are tender crisp. Season with salt and pepper.
