Sweet, crispy, and Italian inspired-- try these out for the next big party!

|1/2 cup||(125 mL) Vegetable oil|
|3 tbsp||(45 mL) Sugar|
|2 tbsp||(30 mL) Cinnamon|
|1 1/2 cups||(375 mL) Mascarpone cheese|
|2 tbsp||(30 mL) Chopped fresh mint, divided|
|2 cups||(500 mL) Assorted finely diced fresh fruit (strawberries, mangoes, kiwi, orange, pineapple)|
CUT lasagna sheets into 12 rounds using a 2” (5 cm) round cookie cutter or into squares using a sharp knife.
COMBINE sugar and cinnamon and set aside.
HEAT oil in a 10” skillet over medium-high. Working in batches fry lasagna rounds for 1 minute per side or until golden brown and crispy. Transfer to a paper towel lined baking sheet to drain.
DUST with sugar and cinnamon mixture while hot and set aside to cool.
MIX together mascarpone and 1 tbsp (15 mL) of mint using a food processor or an electric mixer. Set aside.
COMBINE assorted fruits with the remaining mint.
ASSEMBLE crostinis by spreading each lasagna crostini with mascarpone cheese mixture and topping with fruit. Garnish with a spring of mint if desired.
Drizzle with honey for more sweetness.
