This is a hearty and delicious soup. One of the ultimate comfort foods!
|2 tbsp||(30 mL) Vegetable oil|
|2||Stalks celery, finely diced|
|2||Carrots, finely diced|
|1||Small onion, finely diced|
|2||Cloves garlic, minced|
|3 cups||(750 mL) Diced Schneiders® Olde Fashioned Fully Cooked Smoked Ham, divided|
|2 cups||(500 mL) Dry split green peas|
|8 cups||(2 L) Reduced sodium chicken stock|
|3/4 cup||(175 mL) Sour cream|
|2 cups||(500 mL) Croutons|
|Salt and pepper|
|1/2 cup||(125 mL) Chopped green onions|
HEAT oil in a large pot or Dutch oven. Sauté celery, carrot, onion, garlic and bay leaves until soft and fragrant. Add 2 cups (500 mL) of the diced ham and cook for 5 minutes. Stir in dried peas and chicken stock. Bring to a boil then reduce heat and simmer, covered for 1 to 1 ½ hours stirring occasionally. Meanwhile, in a small skillet, fry the remaining diced ham until golden brown. When peas are soft, stir in sour cream. Season with salt and pepper and garnish with fried ham bits, croutons and green onion.
