Healthy summer salad filled with tons of flavour.
|1||(5 oz/142 g) can Maple Leaf® Seasoned Chicken Breast Chunks (drained)|
|6 cups||(1.5 L) greens or baby spinach leaves|
|1||orange bell pepper, cut into slices lengthwise|
|1||firm ripe avocado, peeled, pitted, and sliced|
|1 cup||(250 mL) blackberries|
|5 cups||(125 mL) thinly sliced red onion|
|2 tbsp||(30 mL) Olive Oil|
|1 tbsp||(15 mL) lemon juice or balsamic vinegar|
|salt and freshly ground pepper|
WHISK dressing ingredients together, allow to stand for 15-30 minutes.
TOSS all salad ingredients together in a large bowl, drizzle with dressing and season to taste.
