034: Winter Roast Challenge
One of my favourite things to do is make a big turkey dinner for friends and family. I have been know to make on in the middle of the summer - because I have air conditioning so whatever lol! I stuff it with a secrect recipe Sweet Potato and Sausage Stuffing.
2 tsp | Sea Salt |
2 tsp | Fresh Ground Pepper |
2 tbsp | Dried Basil |
1/4 cup | Light Extra Virgin Olive Oil |
1/2 cup | Unsalted Butter |
1/2 cup | Water |
1 | Maple Leaf Turkey - 13-15 pounds |
-Using about 1/3 of the butter grease the bottom and the sides of the roasting pan
-Put thawed and rinsed off turkey in the pan, and stuff with the stuffing of your choice.
-Rub the entire turkey with the olive oil
-Season with sea salt/pepper and basil "from a height"
-Cut remaining butter into slices and place along the top of the turkey.
-Add water to bottom of pan and loosely cover with foil
-Put into a preheated 350 degree oven and roast for about 4.5 hours basting every 45 minutes to an hour.
-Remove foil cover for last 30 minutes.
-Let rest in pan for 15 minutes before transferring to a serving dish
