Tender-crisp vegetables with ginger and garlic, tossed with noodles and just a bit of heat from the chillies.
|2 tsp||(10 mL) Vegetable oil|
|1 tsp||(5 mL) Freshly grated ginger|
|1||Clove garlic, minced|
|Pinch of chili flakes|
|2 cups||(500 mL) Assorted stir-fry vegetables (broccoli, carrot, peppers, onion, water chestnut)|
|1/2 Pkg||(454 g) instant chow mein noodles|
HEAT oil in a large skillet or wok to medium-high. Add ginger, garlic, chili flakes and vegetables. Stir-fry until the vegetables are tender-crisp, about 5-6 minutes.
MEANWHILE cook noodles according to package directions. Drain and toss noodles with the vegetable mixture. Toss to coat and serve.
