This Spring salad has a fun twist using Maple Leaf Ham along with other fresh and light ingredients. This is an easy quick lunch or even appetizer for sharing with friends.
|2||lg. egg, hardboiled|
|1/2 cup||drained pickled artichokes|
|1/2 cup||black cured olives or your favourite type|
|1/2||each red and orange bell peppers, sliced|
|1||5 inch piece of cucumber, sliced|
|1 tbsp||canola oil|
|1||pkg Country Kitchen Smoked Ham Steak|
|1||pinch of salt|
Add the oil to a small skillet, preheat it to high. Brown the Ham Steak on both sides, dice to bite size pieces. Place on a serving platter. Drizzle with the Lemon & Raisin dressing packet.
In the same pan, no extra oil is needed, add the peppers and sauté stirring to cook and soften, season with a pinch of salt. Place on platter.
Arrange the remaining vegetables around the platter.
Peel the eggs and cut in half, add to platter
