This Spring salad has a fun twist using Maple Leaf Ham along with other fresh and light ingredients. This is an easy quick lunch or even appetizer for sharing with friends.


2 lg. egg, hardboiled
1/2 cup drained pickled artichokes
1/2 cup black cured olives or your favourite type
1/2 each red and orange bell peppers, sliced
1 5 inch piece of cucumber, sliced
1 tbsp canola oil
1 pkg Country Kitchen Smoked Ham Steak
1 pinch of salt
1/2 tomato, sliced


Add the oil to a small skillet, preheat it to high. Brown the Ham Steak on both sides, dice to bite size pieces. Place on a serving platter. Drizzle with the Lemon & Raisin dressing packet.
In the same pan, no extra oil is needed, add the peppers and sauté stirring to cook and soften, season with a pinch of salt. Place on platter.
Arrange the remaining vegetables around the platter.
Peel the eggs and cut in half, add to platter
