Nutty, spicy, grilled to golden brown perfection. Try these for your Canada Day BBQ!
|1||Package (4 pieces) Maple Leaf Prime Naturally® Chicken Thighs|
|1||Package (5 pieces) Maple Leaf Prime Naturally® Chicken Drumsticks|
|3/4 cup||Smooth peanut butter|
|2/3 cup||Apple cider vinegar|
|1-2||Chipotle peppers in adobo|
|1/3 cup||Olive oil|
|2 tbsp||Brown sugar|
|2 tbsp||Fresh mint|
|2||Cloves garlic, minced|
|1/4 tsp||Fresh ground pepper|
PLACE chicken pieces in a large re-sealable plastic freezer bag or shallow pan.
WHISK together all of the remaining ingredients in a large bowl and pour the marinade over the chicken. Refrigerate for at least 2 hours or up to overnight.
PREHEAT BBQ to medium. Lightly coat the grill with non-stick cooking spray. Transfer the marinade to a small saucepan and bring to a boil. Reduce heat and simmer for 3-5 minutes.
GRILL the chicken for 25-30 minutes, turning and basting until evenly char-grilled and the internal temperature reaches 185°F (85°C).
Serve with your favourite summer salad.
