Ingredients

CHIPOTLE AIOLI:
1 cup (250 mL) Mayonnaise
1 Clove garlic, minced
1/2 (2 mL) Prepared horseradish
1-2 Chipotles in adobo
1 tsp (5 mL) Lemon juice
Salt and pepper
SANDWICH:
6 Slices Dempster’s WholeGrains® Ancient Grains Bread, toasted
4 tbsp 60 mL) Chipotle aioli
1 cup (250 mL) Shredded lettuce, divided
1 Large tomato, thinly sliced
1 Maple Leaf Prime Naturally® Boneless Skinless Chicken Breast, cooked and sliced
1 Avocado, thinly sliced
6 Slices Maple Leaf® Bacon, cooked
2 Hard-boiled eggs, sliced
Salt and pepper
1/2 cup (125 mL) Crumbled Blue cheese, divided

Directions

SANDWICH:
6 Slices Dempster’s WholeGrains® Ancient Grains Bread, toasted
4 tbsp (60 mL) Chipotle aioli
1 cup (250 mL) Shredded lettuce, divided
1 Large tomato, thinly sliced
1 Maple Leaf Prime Naturally® Boneless Skinless Chicken Breast, cooked and sliced
1 Avocado, thinly sliced
6 Slices Maple Leaf® Bacon, cooked
2 Hard-boiled eggs, sliced
Salt and pepper

½ cup (125 mL) Crumbled Blue cheese, divided


CHIPOTLE AIOLI:
PULSE all ingredients together in a food processor.


SANDWICH:
PREPARE sandwich by placing 2 slices of toasted bread on a clean work surface. Spread one side of each with chipotle aioli and top with shredded lettuce, sliced tomato, and cooked chicken. Top each with a second slice of toasted bread, avocado, bacon, hard-boiled eggs, salt and pepper and some crumbled Blue cheese. Finally spread one side of last 2 slices of toasted bread with more chipotle aioli and place on top for a triple-decker club sandwich.
