Sweet mangos and spicy dressing make this a perfect ying yang salad

Ingredients

MANGO SALSA
1 Small mango, peeled, seeded and finely diced
.5 Onion, finely diced
1 Jalapeno pepper, finely diced
.25 cup (60 mL) Chopped cilantro
CHIPOTLE DRESSING
.25 cup (60 mL) Olive oil
2 Cloves of garlic, minced
2 tbsp (30 mL) Lime juice
2 tbsp (30 mL) Sugar
.25 tsp (1 mL) Ground chipotle chili pepper
.25 tsp (1 mL) Ground cumin
SALAD
1 cup (250 mL) Shredded radicchio
1 cup (250 mL) Julienned carrot
1 cup (250 mL) Julienned cucumber
2 to 3, Cooked Maple Leaf Prime Naturally® Boneless Skinless Chicken Breasts, shredded

Directions

SALSA
MIX together salsa ingredients and set aside

DRESSING
WHISK together dressing ingredients and set aside.

SALAD
TOSS together radicchio, carrot, cucumber and chicken. Drizzle with dressing and top with mango salsa.
