Enjoy this traditional Chinese chicken dish, made with a mix of vegetables, lemon, hot pepper flakes, honey and soy sauce, to create a tasty dish you can enjoy with the family.
|1||Package (8 pieces) Maple Leaf Prime Naturally® Boneless Skinless Chicken Thighs|
|1 tbsp||(15 mL) Vegetable oil|
|1||Onion, thinly sliced|
|2||Cloves garlic, minced|
|2||Carrots, peeled and cut on the bias|
|1||Broccoli crown, cut into florets|
|1||Red pepper, cut into strips|
|1 cup||(250 mL) Snow peas, trimmed|
|1 cup||(250 mL) Chicken broth|
|2 tbsp||(30 mL) Cornstarch|
|¼ cup||(60 mL) Soy sauce|
|2 tbsp||(30 mL) Honey|
|1||Lemon, zested and juiced|
|½ tsp||(2 mL) Dried hot pepper flakes|
HEAT oil in a large skillet of medium-high. Sauté the chicken for 3-4 minutes per side. Add onion and garlic; cook until the onions are soft. Add carrot, broccoli and snow peas, cook, stirring for 2-3 minutes.
MIX cornstarch with chicken broth and stir until smooth. Add soy sauce, lemon zest, juice and red pepper flakes. Add the mixture to the pan and cook until the mixture comes to a boil and thickens. Reduce heat and simmer, uncovered for 8-10 minutes or until the internal temperature of the chicken has reached 165°F (74°C). Season to taste and serve with rice or noodles.
