|Salt and Pepper|
|1/4 cup||(60 mL) Chopped cilantro|
|1/4 cup||(60 mL) Chopped parsley|
|1/4 cup||(60 mL) Chopped mixed fresh herbs (chives/thyme/oregano)|
|2 tbsp||(30 mL) Red wine vinegar|
|1 tbsp||(15 mL) Olive oil|
SEASON chicken with salt and pepper. Set aside.
COMBINE cilantro, parsley, herbs, garlic and vinegar in a small bowl.
HEAT oil in a large skillet over medium-high heat. Brown chicken 4-5 minutes on one side, turn over. Divide herb paste over chicken breasts and continue to cook until internal temperature reaches 165˚F (74˚C).
