Lime juice really wakes up the flavours in this easy flavourful dinner dish.
|3||Maple Leaf Prime Naturally® Boneless Skinless Chicken Breasts, cut into strips|
|1||(14 oz) Diced tomatoes, drained|
|1||Jalapeno pepper, diced (optional)|
|1||Red onion, thinly sliced|
|1||Green pepper, seeded and sliced|
|¼ cup||(60 mL) Vegetable oil|
|1 tbsp||(15 mL) Chili powder|
|1 tsp||(5 mL) Cumin|
|1 tsp||(5 mL) Garlic powder|
|½ tsp||(2 mL) Dried oregano|
|12||Dempsters’s® Small 100% Whole Wheat Tortillas|
|Ready prepared salsa|
|Grated Cheddar cheese|
PREHEAT oven to 400°F (200°C). Line a baking sheet with parchment paper.
MIX together chicken, tomatoes, jalapenos (if using), onions and pepper in a bowl. Combine oil and spices in another bowl then drizzle over chicken and vegetables. Spread the mixture over the baking sheet and roast for 20-25 minutes or until the internal temperature of the chicken reaches 165°F (74°C). Squeeze the juice of the lime overtop. Wrap the mixture in warm tortillas and serve with salsa, sour cream and grated Cheddar cheese.
