3 Maple Leaf Prime Naturally® Boneless Skinless Chicken Breasts, cut into strips
1 (14 oz) Diced tomatoes, drained
1 Jalapeno pepper, diced (optional)
1 Red onion, thinly sliced
1 Green pepper, seeded and sliced
¼ cup (60 mL) Vegetable oil
1 tbsp (15 mL) Chili powder
1 tsp (5 mL) Cumin
1 tsp (5 mL) Garlic powder
½ tsp (2 mL) Dried oregano
1 Lime
12 Dempsters’s® Small 100% Whole Wheat Tortillas
Ready prepared salsa
Sour cream
Grated Cheddar cheese


PREHEAT oven to 400°F (200°C). Line a baking sheet with parchment paper.

MIX together chicken, tomatoes, jalapenos (if using), onions and pepper in a bowl. Combine oil and spices in another bowl then drizzle over chicken and vegetables. Spread the mixture over the baking sheet and roast for 20-25 minutes or until the internal temperature of the chicken reaches 165°F (74°C). Squeeze the juice of the lime overtop. Wrap the mixture in warm tortillas and serve with salsa, sour cream and grated Cheddar cheese.
