Prepare a Mexican inspired chicken grilled cheese sandwich by adding in spicy and hot flavours to create one yummy lunch!
|1 tbsp||(15 mL) Olive oil|
|.5||Onion, thinly sliced|
|1 cup||(250 mL) Bell pepper, thinly sliced (red, yellow and orange)|
|Salt and pepper|
|.5||(150 g) Package Maple Leaf® Natural Selections® Oven Roasted Chicken Strips|
|1 tbsp||(15 mL) Cayenne pepper hot sauce|
|1 tsp||(5 mL) Lime juice|
|2||Slices Monterey Jack cheese with jalapenos|
|2||Slices Dempster’s® Stays Fresh™ White Bread|
|1 tbsp||(15 mL) Butter, softened|
HEAT olive oil in a medium skillet over medium-high heat. Add onions and peppers. Cook for 3-4 minutes, stirring occasionally or until softened. Season with salt and pepper. Toss in chicken strips and hot sauce. Cook for 1-2 minutes and remove from heat.
BUTTER one side of each slice of bread. In a non-stick skillet over medium heat place one slice of bread, butter side down. Add a slice of cheese followed by chicken mixture and the remaining slice of cheese. Top with the second slice of buttered bread. Grill for 2-3 minutes per side or until golden brown and the cheese has melted.
Serve with sour cream, salsa and guacamole.
