Chicken tostados are easy to make and a great way to get young ones in the kitchen and helping out.
|8||Dempster’s® Original or Corn Tortillas|
|1||(14 oz/398 mL) Can refried beans, warmed|
|3||Maple Leaf Prime Naturally® Boneless Skinless Chicken Breasts, cooked and shredded|
|2 cups||(500 mL) Shredded lettuce|
|2||Green chili peppers, thinly sliced|
|8||Radishes, thinly sliced|
|1||Avocado, pitted, peeled and sliced|
|1 cup||(250 mL) Grated Tex Mex cheese|
|2 tbsp||(30 mL) Chopped cilantro|
|.33 cup||(80 mL) Sour cream|
HEAT 1 inch (2.5 cm) vegetable oil in a large skillet. Add tortillas, one at a time, and fry on both sides until crispy.
SPREAD refried beans on each tortilla. Top with chicken, lettuce, chili peppers, radishes, avocado and cheese.
GARNISH with cilantro and a dollop of sour cream. Serve immediately.
