Fresh and crunchy! A flavour forward salad for any day of the week.

Ingredients

SALSA:
3 Tomatoes, chopped
1/2 Red onion, chopped
1 Jalapeno pepper, finely diced
1 Clove garlic, minced
1/4 cup (60 mL) Chopped cilantro
Juice of 1 lime
Salt & pepper
Pinch of oregano
Pinch of cumin
SALAD:
1 Package Maple Leaf Prime Naturally® Thin Sliced Chicken Breasts, cooked and shredded
4 cups (1 L) Shredded Romaine lettuce
1 cup (250 mL) Halved cherry tomatoes
1 cup (250 mL) Drained canned black beans
1 cup (250 mL) Sliced yellow bell pepper
1 tbsp (15 mL) Vegetable oil
4 Dempster’s® Original Large Tortillas

Directions

SALSA:
MIX together all salsa ingredients in a medium bowl. Cover and refrigerate for 1 hour.

SALAD:
TOSS together chicken, lettuce, cherry tomatoes, beans and yellow pepper, set aside.

HEAT oil in large skillet over medium heat. One at a time lightly fry each tortilla until crisp.

DIVIDE salad between tortillas and top with salsa. Serve immediately.
