A delicious addition to a classic dish.

Ingredients

1.5 cup cooked barley
.5 cup fresh chopped parsley
.5 cup fresh chopped cilantro
1 red onion, chopped
1 cucumber, chopped
3 tomatoes, chopped
2 tbsp olive oil
3 tbsp lemon juice
.5 tsp salt
2 cups chopped grilled Maple Leaf Prime hicken breast

Directions

1. Combine all ingredients except chicken breast. Let sit for at least an hour.
2. Add chicken breast just before serving.
