Impress your guests with a quick and easy appetizer or side made with Maple Leaf® Seasoned Chicken Breast Chunks.


4 large tomatoes
1 (5 oz/142 g) can Maple Leaf® Seasoned Chicken Breast Chunks(drained)
1 cup (250 mL) cottage cheese
.5 cup (125 mL) cheddar cheese, cubed into ½-inch (1 cm) pieces
.25 cup (50 mL) green onions, thinly sliced
.25 cup (50 mL) green peppers, diced into ¼-inch (5 mm) pieces


SLICE one end off each tomato and scoop out insides with a teaspoon.

DRAIN and chop pulp.

COMBINE chopped tomato with remaining ingredients.

FILL tomatoes with chicken mixture and place “lids” back on top.

SERVE on a bed of lettuce with hot rolls, if desired.
