Super fast and easy. This comforting chicken noodle soup comes together in 30 minutes or less.
|2||(900 mL) Containers chicken broth|
|Juice of 1 lemon|
|1||Clove garlic, minced|
|1||(400 g) Package Maple Leaf Prime Naturally® Oven Roasted Chicken Breast Slices, diced|
|.5||(350 g) Package Olivieri® Angel Hair Pasta|
|1 cup||(250 mL) Frozen peas|
|1 cup||(250 mL) Freshly grated Parmesan cheese, divided|
|.25 cup||(60 mL) Chopped fresh parsley|
|Salt and pepper|
BRING chicken broth, lemon juice, bay leaf and garlic to a boil in a large pot. Lower heat and simmer 6-8 minutes.
ADD chicken and pasta. Cook 3 minutes or until pasta is tender and add the peas and tomato. Stir in ½ cup (125 mL) Parmesan and parsley. Season with salt and pepper and serve sprinkled with remaining Parmesan.
