About this Recipe

A delicious sandwich with a skinless, boneless chicken breast and healthy greens. Make them for lunch, picnics, parties.


454 g Maple Leaf Prime Naturally Boneless Skinless Chicken Breasts
Club House Lemon and Pepper Seasoning, to taste
5 ml olive oil
1/2 cucumber, thinly sliced
1 cup fresh Arugula
4 lettuce leaves
4 tbsp Arugula Pesto or regular pesto
4 tbsp Light cream cheese
1 baguette


1- In a non-stick pan heat the olive oil. Add the chicken breasts and season with Club House Lemon & Pepper seasoning to taste. Cook until no longer pink inside and the juices run clear. (170 degrees F on an instant-read thermometer). Let rest at room temperature.
2- Cut the baguette into 4 pieces.
3- Spread one tablespoon of cream cheese and one tablespoon of arugula pesto on each baguette.
4- Divide the cucumbers on baguettes.
5- Cut the chicken breasts into 4 pieces. Place one piece of chicken on each baguette.
6- Top with lettuce and arugula. Enjoy!
