Easy chicken tacos makes dinner a snap to make when you use leftover cooked chicken breasts.
|1||skinless, bonless chicken breast, cooked and diced|
|1||rib of celery, diced|
|1 cup||shredded iceburg lettuce|
|1||green onion, chopped|
|10||sprigs of cilantro, chopped|
|8||hard taco shells|
1. Place taco shells on a cookie sheet and heat at a low oven (225 deg. F.) until shells gently warm up for about 5 minutes. Turn oven off and take out shells.
2. While the shells are in the oven, in a mixing bowl, mix diced chicken, celery, apple and mayonnaise until well combined.
3. Line bottom of each shell with some shredded lettuce about 2 tbsp. each.
4. Spoon about 3 tbsp. of chicken salad on top of lettuce. Sprinkle on top with chopped cilantro and green onion. Repeat for the remaining taco shells. Enjoy!
