Italian flavours in a delicious puffed casserole. This is easier than anyone will guess. Add a green salad and dinner is served!
|1 tbsp||(15 mL) Olive oil|
|1 lb||(454 g) Maple Leaf Prime Naturally® Minced Chicken|
|1/2 lb||(225 g) Diced pepperoni|
|2 tbsp||(30 mL) Tomato paste|
|1||Red pepper, diced|
|2||Cloves garlic, minced|
|2 tsp||(10 mL) Italian seasoning|
|1||(650 mL) Jar ready prepared Marinara sauce|
|Salt and pepper|
|1 cup||(250 mL) Milk|
|1/4 cup||(60 mL) Melted butter|
|1 cup||(250 mL) Flour|
|1/2 cup||(125 mL) Grated Mozzarella cheese|
|1/2 cup||(125 mL) Grated Parmesan cheese|
HEAT oil in a large skillet over medium-high. Add minced chicken and cook for 6-8 minutes, breaking apart with the back of a wooden spoon. Stir in pepperoni and continue to cook for 2-4 minutes or until chicken and pepperoni turn golden brown. Add tomato paste, onion, pepper and garlic and cook until the vegetables are tender. Add Italian seasoning and Marinara sauce. Season with salt and pepper. Simmer the mixture for 10-12 minutes.
PREHEAT oven to 400°F (200°C).
TRANSFER the cooked meat mixture to a 9x13”(22x33 cm) baking dish. Mix together milk, melted butter and eggs using a hand mixer on medium speed for 1 minute. Add flour and beat for another 2 minutes. The batter will be quite runny. Pour over the meat mixture and sprinkle with the grated cheeses.
BAKE in the preheated oven for 30 minutes or until puffed and golden. Let stand for 10 minutes prior to serving.
