One of our most favourite snacks, these nachos have a pizza flavour…. another of our favourite snacks!
|1 tbsp||(15 mL) Olive oil|
|1 lb||(454 g) Maple Leaf Prime Naturally® Ground Chicken|
|3 tbsp||(45 mL) BBQ seasoning|
|4-6 cups||(1 – 1.5 L) Tortilla chips|
|1||Sweet bell pepper, diced, divided (red, yellow, orange)|
|1||(340 g) Package grated Tex Mex cheese|
|1/3 cup||(80 mL) Sliced black olives|
|4||Schneiders® Country Naturals® Chicken or Turkey Pepperettes, thinly sliced|
|1-2 cups||(250-500 mL) Baby arugula or shredded lettuce|
|2 cups||(500 mL) Prepared salsa|
PREHEAT oven to 375F (190°C).
HEAT oil in a large skillet over medium-high. Cook chicken, breaking apart with the back of a wooden spoon for 8-10 minutes. Add BBQ seasoning and stir to combine.
ASSEMBLE nachos by spreading half the tortilla chips on a parchment paper lined baking sheet. Top with half the cheese, peppers, olives and pepperette slices. Add the remaining tortilla chips and top these with the other half of the cheese, peppers, olives and pepperette slices. Bake in the preheated oven for 10-12 minutes or until heated through and the cheese has melted.
TOP with baby arugula and serve with salsa.
