This simple to prepare Mediterranean chicken is the perfect dish to prepare for a week night or impressive enough for weekend entertaining.
|1 tbsp||(15 mL) Olive oil|
|1||Package Maple Leaf Prime Naturally® Thin Slice Chicken Breasts|
|Salt and pepper|
|2||Cloves garlic, minced|
|1 tbsp||(15 mL) Tomato paste|
|1 tsp||(5 mL) Italian seasoning|
|.25 cup||(60 mL) White wine or water|
|1||(28 oz/796 mL) Can diced tomatoes|
|1 cup||(250 mL) Pitted Kalamata olives|
HEAT oil in a large skillet over medium. Season chicken with salt and pepper on both sides. Add chicken to the pan and cook for 2-3 minutes per side or until golden brown. Remove from the pan and set aside.
ADD onion and garlic to the same pan. Cook 3-4 minutes or until soft. Stir in tomato paste and Italian seasoning. Cook 1-2 minutes. Add wine or water and deglaze the pan by scraping up any brown bits from the bottom of the pan with a wooden spoon. Add tomatoes, bay leaf, sugar and olives. Stir to combine. Bring to a simmer and nestle the chicken back into the pan. Simmer over low for 10-15 minutes, stirring occasionally. Season with salt and pepper to taste.
