A variation of a French favourite. This recipe is delicious and easy to make.


2 cups (500 mL) Maple Leaf Prime® Fully Cooked and Sliced Chicken Breast Strips, chopped
.25 cup (60 mL) Chopped red onion
.50 cup (125 mL) Chopped yellow pepper
1 tbsp (15 mL) Chopped fresh tarragon
1 tbsp (15 mL) Chopped fresh parsley
.66 cup (80 mL) Mayonnaise
2 tbsp (30 mL) Lemon juice
Salt and pepper
1 package POM® Ultra-Moelleux™ Hot Dog Rolls


COMBINE chicken, red onion, peppers, herbs, mayonnaise, and lemon juice in a medium bowl. Season with salt and pepper to taste.

HEAT a large skillet over medium. Meanwhile butter the cut sides of the hotdog buns. Place in skillet, cut side down and toast for about 2 minutes per side or until golden and crisp.

DIVIDE the chicken salad mixture between the buns and serve.
