A variation of a French favourite. This recipe is delicious and easy to make.
|2 cups||(500 mL) Maple Leaf Prime® Fully Cooked and Sliced Chicken Breast Strips, chopped|
|.25 cup||(60 mL) Chopped red onion|
|.50 cup||(125 mL) Chopped yellow pepper|
|1 tbsp||(15 mL) Chopped fresh tarragon|
|1 tbsp||(15 mL) Chopped fresh parsley|
|.66 cup||(80 mL) Mayonnaise|
|2 tbsp||(30 mL) Lemon juice|
|Salt and pepper|
|1||package POM® Ultra-Moelleux™ Hot Dog Rolls|
COMBINE chicken, red onion, peppers, herbs, mayonnaise, and lemon juice in a medium bowl. Season with salt and pepper to taste.
HEAT a large skillet over medium. Meanwhile butter the cut sides of the hotdog buns. Place in skillet, cut side down and toast for about 2 minutes per side or until golden and crisp.
DIVIDE the chicken salad mixture between the buns and serve.
