Delicious healthy Chicken Greek Salad.


2 Maple Leaf Prime Naturally Butterflied Chicken Breast
1/4 cup olive oil
2 tbsp fresh lemon juice
2 garlic cloves, minced
4 fresh rosemary sprigs
salt and pepper, to taste
lettuce, shredded
1/2 cup Greek potatoes, cubed
1/2 cucumber, diced
1/2 cup feta cheese, sliced
1/2 tomato, sliced
2 tbsp red onions, minced
2 tbsp olive oil
2 tbsp fresh lemon juice
1 garlic clove, minced
1/2 tsp dried oregano
salt and pepper to taste


1- In a bowl mix the oil, lemon juice, garlic and chicken. Marinate the chicken breasts for 1 hour.
2- Place chicken on a pan and place the fresh rosemary sprigs on top. Add salt and pepper to taste. Cook in the oven at 350F until the chicken has reached a safe temperature. Set aside.
3- In a big bowl mix the olive oil, lemon juice, garlic, dried oregano, salt and pepper.
4- Add the lettuce, cucumber, tomato and red onions. Mix well.
5- Divide into two plates.
6- Cut the chicken into slices. Divide the greek potatoes, chicken and feta cheese into the two plates.
