|1/2 lb||(225 g) Spaghetti pasta|
|4||Slices Maple Leaf® Bacon, chopped|
|1 lb||(454 g) Maple Leaf Prime Naturally® Ground Chicken|
|4||Cloves garlic, minced|
|1 tbsp||(15 mL) Chili flakes|
|1 tbsp||(15 mL) Olive oil|
|3 tbsp||(45 mL) Flour|
|2 1/2 cups||(625 mL) Milk|
|4 cups||(1 L) Baby spinach|
|2 cups||(500 mL) Cherry tomatoes|
|1/2 cup||(125 mL) Finely grated Parmesan cheese|
|1 tsp||(5 mL) Lemon zest|
|Salt and pepper|
BRING a large pot of salted water to a boil. Cook pasta according to the package directions until al dente, about 9 minutes. Drain well and set aside.
HEAT a large skillet over medium. Cook bacon until brown and crisp, stirring occasionally. Remove from the pan using a slotted spoon and set aside. Add the ground chicken to the bacon drippings in the same pan. Cook, breaking apart with the back of a wooden spoon for about 8-10 minutes. Add garlic and chili flakes and cook for another 1 minute. Sprinkle with flour and cook stirring for about 2 minutes. Slowly add milk and stir to combine. Simmer or 2-3 minutes or until slightly thickened. Add spinach and tomatoes. Return bacon to the mixture and cook for 3-4 minutes or until spinach has wilted the mixture is heated through.
ADD pasta to the skillet and sprinkle with cheese and lemon zest. Season with salt and pepper and toss to coast.
Serve garnished with fresh basil and additional Parmesan cheese if desired.
Substitute Maple Leaf Prime Naturally® Ground Turkey for chicken.
