Juicy, zesty chicken enchiladas will melt in your mouth! The combination of cheese, tomato sauce, cilantro and chicken just work together beautifully.


3 skinless, boneless chicken breasts, diced
1/2 onion, chopped
1 cup cheddar, shredded
1 tbsp oregano, dried
1 3/4 cup tomato sauce
1 tbsp chili powder
1 green pepper, chopped
1/2 cup mushrooms, chopped
1 tbsp cilantro, chopped
1/2 cup sour cream
1/4 tsp black pepper
1/2 cup tomato sauce
1 cup cheddar, shredded
3 ancient grain pitas


Preheat 350.

Fry chicken and onion in olive oil until cooked through.

Add cheddar, oregano. Heat until cheese melts.

Add tomato sauce, chili powder, green pepper, mushrooms, cilantro, sour cream, and black pepper.

Spread in pita, fold up, place in greased casserole. Repeat until all pitas full. Top with extra sauce, cheddar cheese.

Bake 20 minutes.
