This Middle Eastern inspired dish stuffs herbed and spiced chicken into grape leaves to make for a tasty family friendly dish.


1 (8 oz) Jar grape leaves
1 (454 g) Package Maple Leaf® Prime® Naturally Extra Lean Ground Chicken
2 tbsp (30 mL) Chopped fresh parsley
1 Medium onion, finely chopped
3 Cloves garlic, minced
Salt and pepper
.75 cup (175 mL) Couscous
6 cups (1.5 L) Low sodium chicken broth
1 tsp (5 mL) Lemon zest
4 Lemons, juiced
4 Eggs


DRAIN, rinse and dry grape leaves and set aside.

MIX gently chicken, parsley, onion, garlic and couscous in a large bowl, using your hands. On a clean work surface lay out one grape leaf at a time, stem-side up, facing you. Place a heaping tablespoon of chicken mixture in the center of the leaf. Fold the stem up, over the filling, fold in both sides and roll into a cigar shaped bundle. Repeat with the remaining ingredients.

ARRANGE dolmades in a large pot, placing each seam-side down and snugly fitting. Pour in chicken broth to cover. Bring to a boil then reduce heat to a simmer, covered for 25-30 minutes or until the internal temperature reaches 165°F (74°C). Using a ladle, transfer 1 litre of the broth into a large bowl. Set aside to cool slightly. In a medium bowl, beat the eggs until frothy; add lemon juice and lemon zest. Gradually whisk reserved broth into egg mixture half a ladle at a time until combined. Pour this mixture into the pot with the stuffed grape leaves and remaining broth. Remove pot from heat. Cover and let stand for 10 minutes before serving.
