|4||Slices mozzarella cheese|
|1 cup||Fine dry breadcrumbs|
|1/4 cup||Butter, melted|
PREHEAT oven to 350°F (180°C).
POUND chicken breast between two sheets of plastic wrap or waxed paper to an even thickness. Top each flattened chicken breast with a slice of ham and a slice of cheese. Tuck in the edges of the chicken and roll the ham and cheese inside.
PREPARE a shallow baking dish by spraying lightly with a non-stick cooking spray.
WHISK egg and milk together in a shallow dish. Place bread crumbs in a separate shallow dish. Place melted butter in a third shallow dish. Dip each chicken roll first into the egg mixture, then the breadcrumbs, then butter and breadcrumbs again. Place in a shallow baking dish, seam side down. Cover pan with aluminum foil and bake for 15 minutes. Remove aluminum foil and continue to bake for 30-35 minutes or until golden brown and the internal temperature of the chicken has reached 165°F (74°C).
Use a rolling pin to pound chicken breasts flat if you don’t have a mallet.
