A delight to the eyes with so many layers of fresh ingredients in this triple decker sandwich.


1 small chciken breast meat, cooked and sliced
3 fresh strawberries, sliced
4 slices of yellow pepper
2 slices of bacon, cooked
1/2 cup baby spinach leaves
2 thinly sliced tomatoes
6 thinly sliced cucumber
3 tsp mayonnaise
3 slices of sandwich bread, toasted
4 olives, speared by bamboo skewers (optional)


1. Toast the bread. Spread 1 tsp. of mayonnaise on each slice.
2. To assemble sandwich, start with cucumber on one slice of bread, followed by tomato, then spinach.
3. Place second toast on top, followed with chicken, bacon, strawberries and pepper. Top with last piece of toast.
4. Before cutting sandwich into triangles, place 4 bamboo skewers (cut in half if too long) in the middle of each quadrant of sandwich to hold it in place. Carefully, slice diagonally to make 4 triangle sandwiches. Pierce the olive onto each skewer and serve.


A bit of time is required to assemble this sandwich, but the results are very pleasing.
