Garlicky and delicious. These little meatballs are brilliant on an easy Caesar salad!


1 Maple Leaf Prime Naturally® Ground Chicken
1 cup (250 mL) Grated Parmesan cheese
3 Slices Maple Leaf® Bacon, chopped
1 tsp (5 mL) Lemon zest
2 Cloves garlic, minced
2 tbsp (30 mL) Caesar salad dressing
Salt and pepper
6 cups (1.5 L) Chopped Romaine lettuce
2 tbsp (30 mL) Maple Leaf® Ready Crisp® Fully Cooked Real Bacon Pieces
3/4 cup (175 mL) Croutons
2 tbsp (30 mL) Freshly grated Parmesan cheese
1/3 cup (80 mL) Caesar salad dressing


PREHEAT oven to 400°F (200°C).

COMBINE all of the ingredients for the meatballs in a large bowl. Gently mix, using your hands. Use a teaspoon to scoop portions and form into small meatballs. Place on a baking sheet lined with parchment paper. Bake in the preheated oven for 8-10 minutes or until the internal temperature reaches 165°F (74°C).

ASSEMBLE salad in a large serving bowl by adding lettuce, then cooked meatballs, bacon bits, croutons and Parmesan cheese. Drizzle with salad dressing, toss and serve.


Substitute Maple Leaf Prime Naturally® Ground Turkey for Chicken.
