Garlicky and delicious. These little meatballs are brilliant on an easy Caesar salad!
|1||Maple Leaf Prime Naturally® Ground Chicken|
|1 cup||(250 mL) Grated Parmesan cheese|
|3||Slices Maple Leaf® Bacon, chopped|
|1 tsp||(5 mL) Lemon zest|
|2||Cloves garlic, minced|
|2 tbsp||(30 mL) Caesar salad dressing|
|Salt and pepper|
|6 cups||(1.5 L) Chopped Romaine lettuce|
|2 tbsp||(30 mL) Maple Leaf® Ready Crisp® Fully Cooked Real Bacon Pieces|
|3/4 cup||(175 mL) Croutons|
|2 tbsp||(30 mL) Freshly grated Parmesan cheese|
|1/3 cup||(80 mL) Caesar salad dressing|
PREHEAT oven to 400°F (200°C).
COMBINE all of the ingredients for the meatballs in a large bowl. Gently mix, using your hands. Use a teaspoon to scoop portions and form into small meatballs. Place on a baking sheet lined with parchment paper. Bake in the preheated oven for 8-10 minutes or until the internal temperature reaches 165°F (74°C).
ASSEMBLE salad in a large serving bowl by adding lettuce, then cooked meatballs, bacon bits, croutons and Parmesan cheese. Drizzle with salad dressing, toss and serve.
Substitute Maple Leaf Prime Naturally® Ground Turkey for Chicken.
