Delicious comfort food. One pot cooking makes clean up easy. Serve with garlic bread-mmm.
This is also great made ahead and served the next day.


3 lbs chicken pieces (thighs or breasts work nice)
1 1/2 cups carrots-chopped-large chunks
2 cups mushrooms quartered
1 large onion chopped
1 head of broccoli chopped (I use the stalk too)
1 bell pepper-cut in chunks
1 can tomatoes
1 can tomato paste
2 tbsp chopped garlic
1 tbsp oregano
1 tbsp basil
1 tsp salt
1/2 tsp pepper
1 cup red wine
2 cups water
6 tbsp parmesan


In a large pot brown the chicken (I use bone in chicken with skin, so I like to brown it to get the flavour from the skin). Add the onions and mushrooms and cook until onions begin to clear. Add the rest of the vegetables and continue cooking while stirring to combine thoroughly, for about 5 min. Add the remainder of the ingredients (except for the parmesan), and stir well. Allow to simmer on medium heat for about 1 hour. Serve topped with the parmesan.
