This is a chicken and vegetable dish that is all cooked in one skillet that keeps the chicken moist and the vegetables tender.


2 fresh Prime chicken breasts, skinless and boneless
1 can mushrooms
1 can chicken gravy
1 onion, sliced
1 cup pea pods
2 cups cauliflower florets
2 cloves of garlic, minced
2 tbsp oil


Season the chicken breasts with salt and pepper on both sides. Wash and prepare all of the vegetables.

In a large skillet, heat oil on medium high. Carefully brown the chicken on both sides for about 2 minutes each side. Place on a plate and set aside.

Using the same skillet, sauté the onions and garlic for about 5 minutes until brown. Toss in the cauliflower and mushrooms and cook for about 2 minutes. Add in the can of gravy and cover. Cook for about 3 minutes. Add the pea pods and the chicken back in, stirring to coat. Cover and cook for about 5 minutes until the cauliflower is tender and the chicken is cooked through. Divide the chicken and vegetables onto two plates.
