Chicken and Sausage Cabbage Rolls

About this Recipe

Cabbage leaves stuffed with ground chicken, sliced sausage and cooked rice, covered in a sweet and tangy tomato sauce and slow cooked to perfection.

Ingredients

1 Head green cabbage
2 tbsp (30 mL) Olive oil
1 Onion, diced
2 Cloves garlic, minced
1 tbsp (15 mL) Tomato paste
2 tbsp (30 mL) Paprika
1 tsp (5 mL) Smoked paprika
Pinch cayenne
1 tbsp (15 mL) Worcestershire sauce
1 lb (454 g) Maple Leaf Prime Naturally® Extra Lean Ground Chicken
1 300g Maple Leaf® Sausage Meat
2 cups (500 mL) Cooked white rice
Salt and pepper
3 cups (750 mL) Tomato sauce, divided
1 Onion, thinly sliced, divided
1 tbsp (15 mL) Peppercorns
2 tsp (10 mL) Caraway seeds

Directions

HEAT olive oil in a large skillet over medium-high heat. Add onions and garlic and sauté for 2-3 minutes or until soft and fragrant. Stir in tomato paste and cook an additional 1 minute. Add paprika, smoked paprika, cayenne and Worcestershire. Remove from the heat to cool slightly.

PLACE chicken and sausage meat in a large bowl. Gently mix in cooked rice and seasoned onion mixture until combined. Season with salt and pepper.

PREHEAT oven to 350°F (180°C).

Roughly chop the remaining head of cabbage. Pour 1 cup (250 mL) tomato sauce into the bottom of a 9 X 13 inch (3.5 L) rectangle baking dish. Spread a layer of chopped cabbage over the sauce along with ½ the sliced onion.

PLACE one cabbage leaf on a clean flat work surface. Using a sharp paring knife remove some of the tough rib from the leaf. With that side facing you, place about 1/3 cup (80 mL) depending on leaf size, of meat mixture in the center of the leaf. Roll up, folding in the sides to enclose, into a bundle. Place in prepared baking dish. Repeat with remaining cabbage leaves and filling. Fit all rolls snuggly into the pan. Spread another layer of chopped cabbage and remaining sliced onions over. Pour remaining sauce over and sprinkle with peppercorns and caraway seeds.

COVER with aluminum foil and bake in preheated oven for about 1 hour and 30 minutes or until cabbage is tender and the internal temperature of the cabbage rolls has reached a minimum of 165°F (74°F).
