Chicken Afriada is a popular Filipino dish cooked in tomato sauce with loads of earthy vegetable flavours
|1 Pkg||(4 pieces) Maple Leaf Prime Naturally® Chicken Thighs|
|Salt and pepper|
|3 tbsp||(45 mL) Olive oil, divided|
|2||Cloves garlic, minced|
|1||(398 mL) Can tomatoes|
|1 1/2 cups||(375 mL) Chicken broth|
|1 tbsp||(15 mL) Fish sauce|
|3||Medium potatoes, peeled and diced|
|2||Medium carrots, peeled and diced|
|1||Yellow pepper, chopped|
|1 cup||(250 mL) Frozen green peas|
SEASON chicken liberally with salt and pepper. Heat 1 tbsp (15 mL) olive oil in a large skillet over medium-high. Add chicken and sear for 2-3 minutes per side or until golden brown. Transfer to a plate and set aside.
REDUCE heat to medium and add remaining oil. When the oil is hot, add onion and garlic. When onions are cooked and fragrant add tomatoes, broth, fish sauce and bay leaves. Return the chicken to the pan, cover and reduce heat to low. Simmer for 15-20 minutes. Add potatoes and carrots and cook for another 10-15 minutes. The internal temperature of the chicken should be 185°F (85°C) and very tender. Add peppers and frozen peas and cook for another 2-3 minutes. Remove the bay leaves and discard. Season to taste with salt and pepper. Serve with steamed rice.
