Fragrant lemongrass and ginger infuse this healthy chicken soup.
|6 cups||(1.5 L) Chicken Broth|
|2||Stalks celery, thinly sliced|
|1||Piece of fresh ginger, thinly sliced into matchsticks|
|1||Maple Leaf Prime Naturally® Boneless Skinless Chicken Breast|
|2||Limes, cut in wedges|
|1 tsp||(5 mL) Sesame oil|
|1 tbsp||(15 mL) Balsamic vinegar|
|2 tbsp||(30 mL) Soy sauce|
BRING broth to a boil in a large pot. Add celery, ginger, lemongrass and star anise, reduce heat and simmer for 5 minutes.
SLICE chicken breast crosswise into paper thin slices. Add chicken to the pot and simmer 5-6 minutes or until chicken is cooked through. Remove lemongrass and add lime wedges. Season with sesame oil, balsamic, soy sauce and pepper.
Garnish with Thai basil. Add hot chili garlic sauce for a spicy kick.
Serve over rice noodles for a noodle soup.
